Farm Updates

What a week we have in store!

This week we are sharing something we have been caring for since the very start of spring, fresh ginger.

From a short stay in the greenhouse to being planted in May in the other high tunnels. It has been steadily developing those plump rhizomes we love so much. Now that the stalks are starting to die back, the plant is telling us it is finished and has put all its energy into the final product that we will harvest in the weeks ahead. Note also the stalks themselves are also wonderful for teas and broths.

This week you will see quite a few things that pair beautifully with ginger. We hope you enjoy the makings of a farm-curated stir-fry. Chinese cabbage is also a very special crop, as it takes some finesse to start greens in the heat of summer, which we need to do for how long it takes to develop a denser core. Do not be intimidated by their size, they store very well in the crisper drawer, and if you need some time before using them, you may only need to peel away a few outer leaves.

We are finally winding down on our potato supply, so this will be the last couple of weeks before this summer staple leaves us. In its place, a fall favorite is on the way, winter squash. Next week we plan to start with pumpkins!

With summer now behind us, we still technically have a few weeks before frost makes its first visit. So, we made sure to sneak in a late cucumber seeding and a few more rows of beans, both of which are looking to be more plentiful next week. With a little luck, we’ll hang on to them for a couple more weeks as we roll into fall with style. Enjoy!
